This time of year we look to our fridges and cupboards to create warm hearty meals on these cold evenings. This vegan chilli is perfect for those exact nights. Warming, hearty, healthy and best of all, tasty for vegans and those looking to reduce meat in their meal plans. The combination of beans, quorn or any meat free alternatives and the cooking time pulls these relatively inexpensive ingredients together for a great meal. This is great paired with some rice or a classic baked potato.

While we may be moving less frequently or looking for a quick and easy way to get some more veg and healthy foods into our meals this a great way to do just that. Check out the recipe and let us know if you give this a try.

Ingredients:

1 Bag tesco meat free mince
1 Tin chickpeas
1 Tin borlotti beans
1 Tin taco mixed beans
1 Tin chopped tomatoes
1 Onion
3 Cloves garlic
2 Fresh chillis
300g Frozen garden peas
Worcestershire sauce
Chilli powder

Method:

Chop the onion, chilli & garlic and add to the pan for 2-3 mins. Add the meat free mince and stir until separated. Then add all the beans, peas and chopped tomatoes. Season with chilli powder and Worcestershire sauce to taste. Leave on a medium heat for 30-40 minutes & serve!
